FEATURE: Baking the Perfect Brownies

I had been trying for some time, without any great success, to bake some cannabis brownies that would retain all the potency of the active medicinal properties one gets when smoking the material. The first two times I tried to bake them, I did it the way I had been told to do it and heated the main ingredient in vegetable oil in a pot on a stove in order to let the THC (tetrahydrocannabinol, the active chemical in marijuana which is soluble in alcohol and fats) infuse itself into the oil. The oil, in turn, was to be mixed into a brownie mix requiring oil as one of the ingredients. Unfortunately, even on the lowest heat setting, the oil got too hot and a great deal of the cannabis burned up, leaving ashes floating in the oil. Too much heat will destroy most of the active ingredients in the cannabis. The brownies that resulted did, to be sure, have some slight effect, but it was more mild than if the cannabis had been smoked.
One night I was trying to think of a more efficient way to dissolve the THC in the vegetable oil. I finally remembered from my high school physics class that immersing a container in a pot of boiling water would keep whatever is in the container heated at a constant 100 degrees Celsius (212 degrees F.) Ah! The wonders of science! So, I took a glass jar, put into it the 1/2 cup of oil required by that brand of brownie mix and set the jar in the middle of a pot of boiling water. Then I dropped an eighth ounce of destemmed, deseeded, and finely chopped cannabis into the oil, where I left it for about one hour. No smoke, no scorching, just a nice herbal aroma from the jar.
After the oil had cooled, I mixed up the batter, pouring the oil (still containing the green stuff) into the batter and proceeded to bake . The resulting brownies were declared to be an unqualified success by all those whom I shared them with. The herbal material in the brownies gave them an interesting texture, too. If you do not wish to fill your lungs with the pollution of burning vegetative material that cannabis smoke contains, try this efficient and healthier method of cannabis consumption. A basic recipe to make brownies from "scratch" is provided below:

Note: The following recipes require the use of cannabis which has been cleaned of stems and seeds:

Brownies (from scratch)
1/2 cup flour
3 tablespoons shortening
2 tablespoons honey
1 egg (beaten)
1 tablespoon water
1/2 cup finely chopped cannabis
- pinch of salt
1/4 teaspoon baking powder
1/2 cup sugar
2 tablespoons corn syrup 1 square melted Baker's chocolate
1 teaspoon vanilla
1/2 cup chopped nuts (optional)

Sift flour, baking powder, and salt together. Mix shortening, sugar, honey, syrup, and egg. Then blend in chocolate, cannabis and other ingredients, and mix well. Spread in an 8-inch square pan and bake for 20 minutes at 350 degrees.

Acapulco Guacomole
3 ripe avocados
1/2 cup chopped onions
2 teaspoons chili powder
3 tablespoons red wine vinegar
1/2 cup finely chopped cannabis
Mix the vinegar, cannabis, and chili powder together and let the mixture stand for one hour. Then add the avocados and onions and mash it all together (or blend in food processor.) It can be served as a dip with taco chips and vegetables such as sliced carrots, celery stalks, etc.

Cannabis Soup
1 can condensed beef broth
3 tablespoons cannabis
3 tablespoons lemon juice
1/2 can water
3 tablespoons chopped watercress

Combine all ingredients in a saucepan and bring to a boil over medium heat. Remove from heat and place in a refrigerator for at least two to three hours. Reheat when ready, and serve.

Pork and Beans
1 large can (1 lb. 13 oz.) pork and beans
1/2 cup cannabis
4 slices bacon
1/2 cup light molasses
1/2 teaspoon hickory salt
3 pineapple rings

Mix together in a casserole, cover top with pineapple and bacon, bake at 350 degrees for about 45 minutes. Serves about six.

Meat Balls
1 lb. hamburger
1/4 cup chopped onions
1 can cream of mushroom soup
1/4 cup bread crumbs
3 tablespoons cannabis
3 tablespoons India relish

Mix it all well and shape into meat balls. Brown in frying pan and drain. Mix soup and 1/2 cup water in a casserole dish. Place meat balls in the casserole, cover and cook over low heat for about 30 minutes. Serves four.

Spaghetti Sauce
1 can (6 oz.) tomato paste
2 tablespoons olive oil
1/2 cup chopped onions
1/2 cup chopped cannabis
1 pinch pepper
1 can (6 oz.) water
1/2 clove minced garlic
1 bay leaf
1 pinch thyme
1/2 teaspoon salt

Mix in large pot (no pun intended), cover and simmer with frequent stirring for two hours. Serve over spaghetti or other pasta.

Turkey Loaf
1 packet onion soup mix
1 (16 oz.) can whole peeled tomatoes
1/2 cup chopped cannabis
2 lbs. ground beef, chicken or turkey
1 egg
4 slices bread, crumbled

Mix all ingredients and press into a loaf pan. Bake for one hour in 400-degree oven. Serves about six.

Chili Bean Pot
2 lbs. pinto beans
1 lb. bacon, cut into two-inch sections
2 cups red wine
4 tablespoons chili powder
1/2 clove garlic
1 cup chopped cannabis
1/2 cup mushrooms

Soak beans overnight in water. Simmer in a large stockpot for at least an hour, adding more water to keep beans covered. Now add all other ingredients and continue to simmer for another three hours. Salt to taste. Serves about ten.

Poultry Stuffing
5 cups rye bread crumbs
2 tablespoons poultry seasoning
1/2 cup each of raisins and almonds
1/2 cup celery
1/3 cup chopped onions
3 tablespoons melted butter
1/2 cup finely chopped cannabis
2 tablespoons red wine

Mix it all together, and then loosely stuff it into the prepared bird's cavity.

Baked Apple
4 apples (cored)
1/2 cup brown sugar
1/4 cup water
4 cherries
1/3 cup finely chopped cannabis
2 tablespoons cinnamon

Powder the cannabis in a blender, then mix cannabis with sugar and water. Stuff apple core cavities with this paste. Sprinkle apples with cinnamon, and top with a cherry. Bake for 25 minutes at 350 degrees.

Banana Bread
1/2 cup shortening
2 eggs
1 teaspoon lemon juice
3 teaspoons baking powder
1 cup sugar
1 cup mashed bananas
2 cups sifted flour
1/2 cup chopped cannabis
1/2 teaspoon salt
1 cup chopped nuts

Mix the shortening and sugar. Beat eggs and add to the mixture. Separately mix the bananas with lemon juice and then add to the first mixture. Combine and sift flour, salt, and baking powder, then add to mixture. Bake for 1 1/4 hours at 375 degrees.
Sesame Seed Cookies
A Real Favorite!
3 oz. ground roast sesame seeds
3 tablespoons ground almonds
1/4 teaspoon nutmeg
1/4 cup honey
1/2 teaspoon ground ginger
1/4 teaspoon cinnamon
1/4 oz. cannabis
Toast the cannabis until slightly brown and then crush it in a mortar. Mix crushed cannabis with all other ingredients, in a skillet. Place skillet over low heat and add 1 tablespoon of salted butter. Allow it to cook. When cool, roll mixture into little balls and dip them into the sesame seeds.

Alwa
An exotic, favorite confection from India. It will keep for a long time, so this recipe allows you to make a large batch.
1 oz. nutmeg
1/4 oz. cardamom
1/4 oz. cloves
1/2 caraway seeds
1/2 oz. poppy seeds
1/2 oz. cinnamon
1/2 oz. sandal
1/2 oz. anise seed
1 1/2 oz. rose petals
1 1/2 oz. honey
1/2 oz. dried figs
12 oz. sugar
12 oz. almonds
1 oz butter
€ pinch of saffron
1/2 oz. cannabis

Place cannabis in 5 oz. cold water and heat over high setting for 15 minutes. Strain out the cannabis, squeeze and reserve excess water from it. Set water aside for later use. Place the drained cannabis in a pan with the butter and heat over low temperature for 30 minutes. Strain out the vegetable matter and discard. Add the sugar to the water that you set aside and boil it until it is reduced to a thick syrup. Grind poppy seeds, figs, almonds and rose petals and mix into the thickened syrup. Grind all other ingredients except the honey and mix well in a large bowl with syrup mixture. Add the honey and mix well again. Chill until firm. Serve in small portions the size of a marble.

Here is one of the freshest, most natural and best snacks you can try: Pick a medium-sized leaf off of the cannabis plant and dip it into a cup of drawn butter, sprinkle with lemon juice or seasoned salt and eat.
